SharePoint 2010 On-Premise cannot be set up for incoming email from Office 365

Our scenario is Office 365 (includes Exchange and SharePoint On-Line). However, we have an on-premise SharePoint Foundation 2010 which we have successfully configured outgoing email. We used the"Client SMTP Submission" method for outgoing. Our Global IT manages Office 365, and the 365 config was easy as it only needed our local SP servers in the SMTP relay.

What is the procedure for SP Foundation 2010 on-premise to receive incoming email via Office 365?

In Office 365, the SMTP relay (SMTP client submission)is only used to let you sending emails from your devices or business applications. So it is not feasible to configure incoming emails to be received into your on-promise SharePoint 2010 Foundation.
As a workaround, you may refer to the article below to configure incoming emails for your SharePoint Foundation.

I have experience with the "old" method when we had Exchange on premise. I'm
looking at the workaround you suggested, Without Exchange on premise, the path
would be the "Basic Scenario". We have a 3-server Farm: WFE, APP,
SQL. Looking at the article:<o:p></o:p>

- SMTP is installed on both servers running SharePoint Foundation 2010 (WFE and APP)<o:p></o:p>

- IIS 6 Management is installed on both servers<o:p></o:p>

- SMTP is configured as per article<o:p></o:p>

- Configure incoming e-mail in Basic Scenario the incoming server display name is defaulted toserver.xx.xxxx.local so I changed to our external address companyx.com. <o:p></o:p>

- In a library, I enabled the ability to receive email and gave the document library a
Tester account  email address and it shows as Tester@companyx.com. I sent an email,nothing came in.<o:p></o:p>

- Going back to the Basic scenario, I changed the external address back to server.xx.xxxx.local.<o:p></o:p>

- Back at the library, the email address was auto changed totester@server.xx.xxxx.local. I sent an email toTester@companyx.com
(can't send it to tester@server.xx.xxxx.local of course). Nothing came in,<o:p></o:p>

Is there something I'm missing?
