remove publishing workflow from publishing sites

I've set up all my sites using the OOTB Publishing Approval Workflow. Its now been decided that the workflow is more complex than we need. Can I remove it simply by deactivating the Publishing Approval Workflow from the Site Collection Features? I'm nervous about trying this on my live system!

All that's now required is the standard SharePoint Check In / Check Out process.
